Walk Among the Magueys at Hacienda Amoltepec

While they used to grow crops and raise livestock at this hacienda, for over three years now, they’ve worked to revive maguey farming and pulque production. Watching how pulque, the fermented sap of the maguey plant, is created is a magical process. Walk among the magueys that take eight to ten years to grow. During full moons they cover them so they don’t fill up with worms. During the new moon they scrape them to slowly seep out the pores and get the aguamiel (sap) that will be turned into pulque. A visit to Amoltepec includes a tasting of agave syrup and pulque liquor they make here. Additionally, the hacienda has ten rooms that appear to have been brought from the past. The rooms are arranged around a courtyard with a central fountain. You can go horseback riding or mountain biking in the surrounding areas, and they offer boat rides on a lake that looks like something out of a fairy tale.
