Try Local Food
Among the dishes you should try is the olla podrida (“rotten pot”–a dish of stewed lamb) and the asado (pork stew with chili). The tatemado (lamb roasted in a pit), the caldo con xoconostle (a soup made from a type of prickly-pear cactus), the gorditas de horno (baked corn pockets with savory fillings), the atole de pinole (pre-Hispanic drink) and the mescal are part of the local cuisine.
Ask after the queso de tuna, a kind of biscuit prepared with the juice from a prickly pear. Take it home and pair it with some goat’s cheese.
