The classics include pacholas (a soft, ground beef dish), rice mole, tripitas (tripe bathed in salsa verde) and bone marrow steak. Birria from Don Inés’ (next to Mercado Chico), or at Fonda El Reloj (near the traffic junction) and the guacamayas (pork crackling sandwiches) downtown are also worth trying.
