Dig Into the Food of the Huasteca Potosina
To satisfy your appetite, there is no lack of stands and restaurants usually offering regional fare. For example, there is cecina, a type of salted, air-dried beef served with Huastecan enchiladas. Or, try zacahuil, an enormous tamale of corn dough and meat steamed in banana leaves. It can be over a yard long and filled with pork, turkey, or chicken—this kind is called bolim. Or sample bocoles, small patties of stuffed corn dough, and pemoles, cookies made with pinole, ground roasted corn.
